In the 1990s, Edi despite his success with Tocai boldly chose to make only one wine: Collio, from native grapes. Back then, blends were undervalued, though great terroirs had long combined varieties for more complete wines. Today, Kristian carries on his father’s vision, uniting existing vines with fruit trees and animals, creating a vibrant ecosystem that enriches the land.

The grapes, harvested by hand by area, are pressed without destemming. Spontaneous fermentation and aging in concrete vats for 1 year, after which all areas are blended into a single wine and remain in stainless steel tanks for a further 6 months. Here, the wine naturally stabilizes and is bottled without filtration.
