Grape variety used: 100% Moscato Giallo.
Location of the vineyards: in the valley bottom and on hills up to 400 m
a.s.l. Part of the soil is sandy and gravelly with a good limestone
component, which lends the wine freshness and elegance, while the rest
is heavier with a high content of clay.
Training system: Trentino pergola for the older vineyards and Guyot for the younger ones.
Harvest: Careful, timely thinning ensures that grape yields per unit of
surface area are within the limits established by the production standards.
The harvest takes place in mid-September, choosing the ripest, healthiest bunches and using small containers to quickly transport them to the winery.
FERMENTATION AND AGING
Fermentation: the whole grapes transported to the winery are immediately cooled and then destemmed and crushed. Before pressing, the grapes are cold macerated on the skins for approximately 6 hours to improve extraction of the aromas. Alcoholic fermentation lasts approximately 7 days and occurs at controlled temperatures between 16 and 18°C. After fermentation is complete, the wine is cooled and separated from the gross lees to prevent malolactic fermentation.
Aging: the wine is aged for approximately 5 months in steel tanks at
a temperature of approximately 10°C.
Colour: deep straw-yellow colour with golden highlights.
Aroma: very intense and lingering, with aromatic notes that express the varietal character of the grapes.
Flavour: well-rounded and balanced, pleasant and inviting due to its hint of
