Collezione Apponale, Cabernet Sauvignon, Trentino DOC

CHARACTERISTICS
Grape variety used: 100% Cabernet Sauvignon.
Location of the vineyards: on very gravelly, clay-rich soil, located in hilly areas or foothills up to an altitude of 150 m a.s.l. The vineyards have the best exposure to ensure the grape bunches receive the greatest possible number of hours of sunlight during ripening.
Training system: Trentino pergola for the older vineyards and Guyot for the
younger ones. 
Harvest: Careful, timely thinning ensures that grape yields per unit of surface area are within the limits established by the production standards. The harvest takes place around late September to early October, selecting the ripest, healthiest bunches.

FERMENTATION AND AGING
Fermentation: The whole grapes transported to the winery are immediately destemmed and crushed. Alcoholic fermentation takes place at controlled temperatures between 25 and 28°C, with maceration on the skins until the sugars are exhausted (5 to 8 days). The wine is then partially clarified through a couple of rackings and undergoes malolactic fermentation to achieve balance and plushness.
Aging: The wine is aged for approximately 10 months in cement vats, steel tanks and oak barrels. Before bottling, the different batches are suitably blended.

ORGANOLEPTIC CHARACTERISTICS
Colour: deep ruby red, possibly with purplish hints.
Aroma: elegant, generous and intense, the fruity notes (blackberry, raspberry)
are enhanced with pleasant grassy scents characteristic of the Cabernet Sauvignon varietal.
Flavour: well-structured with a good weight, this wine is also exceptionally plush and inviting to drink.
