Made from a local white grape that only grows in Liguria, Pigato is a flagship wine of Ligurian winemaking. The label features Castle Doria in golden yellow, like the straw yellow tinges of the wine, emphasised by a white line that is a stylised image of the humpback bridge, on a white background. It is an image that encapsulates Dolceacqua.

Wine region

The most suitable areas and vineyards for growing Pigato grapes are the zones of Albenganese, Cisano sul Neva, Salea and Ranzo.

Cultivation systems

Pigato grapes are cultivated using the the Guyot trellis system. All aspects of vine cultivation are carried out by hand due to the morphology of the terrain.

Winemaking

The hand-harvested grapes are delivered by the members of the cooperative just a few hours after the grape harvest. The grapes are soft pressed with extreme delicacy to avoid damaging the skins. Before the classic white winemaking process begins, some of the grapes are macerated with CO2 snow for a few hours to accentuate the typical character and style of the wine. Fermentation takes place at a controlled temperature (16-18°C) in stainless steel vats using selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the wine. After a brief period of ageing in steel vats, the wine is bottled in the spring following the vintage (harvest)..

COLOUR:Dry white wine with straw yellow colour.

AROMA:   It has an intense fruity aroma, with hints of peach and apricot, with notes of almond and a distinctly citrussy taste, with notes of grapefruit.

FLAVOUR: It is an elegant dry wine with a fresh taste and good balance.

Serving temperature

Best enjoyed at a temperature of 9-12°C.

Wine and food matching

 It matches very well with fish dishes which exalt the freshness and the quality of the ingredients.

Cellar life recommended cellar life: 2 to 3 years.
