Grape variety

Pinot Nero on Teleki 8 rootstock (V.Berlandieri x V.Riparia)

Training system

Double Trentino arbour connected with 5.00 x 0.60 m plant spacing for a total of 3300 vines per hectare. Two fruit canes per vine with a total load of 20 buds.

Terrain

alluvial, gravelly, former river-bed and relative basin of the River Noce, composed of stones, known as “sassi robi”, covered with a surface layer of top soil.

Grape harvesting period

harvested on 10 September 2008 after the first white varieties, to achieve balanced acidity and an abundant content of grape sugar.

Vinification

the grapes, picked by hand, reach the winery where they are crushed and pumped into steel vats for about 24 hours in contact with the skins. Once they have been taken out of the vats and settled, primary fermentation begins and is thoroughly controlled. As a rule, and above all this year, second, malolactic, fermentation does not take place, in order to keep the aromas fresh and fruity. Once decanted, in order to separate the yeasts, it stands in steel containers in the cold until January.

Ageing

bottled in spring and, after a short standing period, it is ready to be sold.
