Production area: Ronchi di Ala (Trento), at 823 m. above sea level.
Grape variety: Pinot Nero and Chardonnay.
Soil composition: complex and varied, composed mostly of marl and limestone.
Growing system: espalier with guyot pruning; cultivation density at approximately 5000 plants per hectare, on a very steep slope facing the southwest.
Harvest: totally by hand using 20 kg boxes, at the end of September.
Vinification: the grapes, manually selected and harvested in small boxes, are kept whole, the stalks are not removed, and the pressing is gentle. The precious juice obtained is then fermented in small cement vats. Fermentation temperature is lowered by using strictly water from the Maso Michei spring. After an initial reposing phase, the first yeast fermentation takes place in the mountains until springtime.
The drafting of the wine, which involves adding choice yeast and sugar, is carried out in the small wine cellar of Maso Michei where the wine is aged for at least 24 months, surviving two hard winters in the mountains.
After disgorging the bottles, they are topped up with a very fine liqueur d’expedition.
Alcohol content: 12% by volume.
